Korean signage lines the walls, tables stay packed, and the kitchen keeps its focus razor-sharp on half a dozen traditional pork staples. Those in the know brave the wait for massive platters of braised jokbal, richly glazed and tender with no gamey notes. Steaming bowls of gukbap arrive boiling hot and clean-tasting, ready to be seasoned at the table with salted shrimp sauce, chili paste, and crunchy radish kimchi.

    Rather than serving a generic pan-Korean menu, the kitchen focuses narrowly on traditional pork bone soups, soondae, and braised pork hock with no gamey notes.

    Their Jokbal and Pork soup are by far the closest to the ones I had in Korea! The broth was clean yet flavourful with no gamy taste.
