Tombo Den brings an electric, design-led Japanese restaurant and sake bar to Chapel Street in Windsor. Perched at the front sushi counter, diners watch chefs slice aged kingfish and fold toro hand rolls with crisp nori. The kitchen sends out smoky hibachi steak and beef tataki into a moody, izakaya-style room humming with late-night energy. Upstairs, a private dining room pairs shared feasts with karaoke for milestone parties. Rounds of tonka bean espresso martinis keep the evening rolling late.
