Guests follow an unprinted progression dictated by the kitchen—think tender cuttlefish over polenta, delicate zucchini and Gorgonzola soufflé, and tagliatelle coated in rich rabbit ragù. Stefano de Pieri wanders the floor himself to guide cellar selections and pour Victorian and regional Italian vintages, before courses wind down with fennel ice cream in meringue.
