Armadale’s Amaru reimagines Australian native produce through an immersive, multi-course sensory degustation. Dishes arrive directly from the kitchen brigade—the very cooks who assembled each course step up to narrate the techniques, ingredients, and provenance behind them. Diners settle in around the intimate counter or dining room for courses like Australian bluefin tuna with desert lime, sweet mud crab with caviar, and tender wagyu paired with macadamia miso. In-house fermentations shine through a dedicated non-alcoholic pairing, running from a tart quince shrub to sourdough kvass. Before the savoury main arrives, guests pause to handpick their knife from a curated roll. The printed menu stays under wraps until the final course clears, handed over as a memento alongside confections like Geraldton wax bonbons and Davidson plum sorbet.
