Tucked on level two inside the Society dining complex at 80 Collins, Lillian Brasserie delivers moody glamour without the usual fine-dining stiffness. Step out of the lift into a low-lit European room framed by warm leather, dark corners, and chandeliers. Regulars come to celebrate milestones or impress a dinner date over a Caviar Martini—served with nori-infused vodka and a caviar pretzel—before digging into rich spanner crab rigatoni, pan-seared scallops with sobrassada, and soft parmesan gnocchi. A massive cellar list anchors the table, while the floor team keeps pace with warm, sharp service right through to fresh-baked apple tart and warm chocolate soufflé.
