Regulars bypass standard tonkotsu for the duck shouyu topped with fragrant yuzu and charred negi, alongside peppery, garlic-glazed wings inspired by Nagoya tebasaki. Crisp-bottomed pork gyoza and soft mochi finished with salted miso caramel round out the counter spread.
