About Vandels Bakery

Brunswick’s Sydney Road bakery routinely clears its glass displays by morning, drawing early crowds for precise lamination and inventive bakes. The bee sting croissant is the centerpiece—crisp pastry layers concealing cinnamon crema catalana beneath a crunchy almond Florentine glaze. Savory bakes hold their own ground. Enthusiasts point to the pork and fennel sausage roll alongside refined chicken and mustard pies. Sweets rotate through horchata lemon tarts and spiced fruit buns, paired with filter roasts from Dukes or a morning chai while dogs lounge beside the indoor sofas.

  • Signature Bee Sting Croissant: Shatter-crisp pastry filled with cinnamon crema catalana and topped with honey-slicked almond Florentine.
  • Refined Savory Bakes: Juicy pork and fennel sausage rolls and chicken and mustard pies wrapped in golden, flaky pastry.
  • Coffee & Dog-Friendly Lounging: Dukes filter coffee and spiced chai in a pet-friendly room with sofa seating.

Why Vandels Bakery Earns Every Bit of Hype

From standout pastry craft to dog-friendly cafe lounging, here is why patrons make the trip to Brunswick.

  • Signature Multi-Layered Bee Sting Croissant

Signature creations like the bee sting croissant deliver a multi-layered bite with flaked almond Florentine, honey syrup, and smooth crema catalana custard.

First bite in one gets the crunch of the lovely flaked almond Florentine biscuit mix which adds a nutty richness, the crispy layers of the croissant, the slight honey flavour of the syrup between the croissant and flaked almonds, and in the middle is the smooth cinnamon-infused crema catalana.

  • Inventive Custard and Tart Profiles

Unconventional sweet bakes like the horchata custard and lemon tart pair delicate flaky pastry with inventive dessert flavour combinations.

The horchata custard and lemon tart is seriously one of the best tarts I have ever had (and we have tried some of the best Portuguese tarts around melbourne) - a juicy flavour bomb with superbly flakey pastry that melts in your mouth.

  • Apple, Rhubarb & Ginger Cream Bun

This is another interesting creation. The bun is more like a cinnamon scroll but biting in, it reminds me of a jam and cream bun. The rhubarb is very sweet, smooth, like a jam and with the apple, there is a tanginess. Against the jam, there's a slight hum of the ginger. The smooth airy cream in the middle adds a nice moisture. The bun is light and this pastry is not doughy or heavy. I rather like it.

So far the best in show is the coffee and cardamom bun - warm from the oven on a Friday morning, it was perfect.

Before you head over

Practical advice on timing and seating to make the most of your visit.

  • Arrive early for the best pastry selection

Popular pastries like the signature bee sting croissant frequently sell out, leaving cabinets nearly bare as early as 8:00 AM or by mid-afternoon. Head in early to secure your first choices.

  • Time your visit for mid-morning restocks

If you miss the opening rush, restocks and fresh hot batches—including meat pies and sausage rolls—often emerge around 10:30 AM or later in the morning.

  • Bring your dog inside to lounge

You do not have to leave four-legged companions outside; the interior accommodates pets and provides sofa seating for a relaxed morning coffee.
