A strict multi-course ritual runs the table—first house-made sausage, then a mixed grill plate of liver and pork neck, alongside warm bread and vinegar-dressed slaw. Diners pick their cut table-side before it hits the coals, paired with sharp homemade mustard and finished with fresh strawberry crepes.
