Set inside a restored flour mill off the Hume Freeway, Northern Republic pairs blistering wood-fired pizzas with regional wines and a rambling leafy courtyard. High timber ceilings frame an open dining hall warmed by indoor fire, where tables fill with crisp-bottomed pies and Italian-style share plates like house gnocchi and tender calamari. Out back, travellers and locals spread across garden tables for cold craft pints with dogs resting at their feet. The kitchen keeps things straightforward—charred crusts, slow-cooked ragu, and generous boards built for sharing before getting back on the road.
