UMINONO shakes up Prahran with a counter omakase blending Japanese discipline and French culinary technique. Settle in by the counter—this isn't a stiff sushi temple. The course opens with rich house dashi before moving to aged nigiri, from Tasmanian otoro to sweet scallop waking up under fresh wasabi. Sommelier Kiki pours thoughtful sakes and wines, chatting through each pairing without fine-dining fuss. When time is tight, diners grab chirashi bowls or take home an omakase box.
